Loitta Shutki (লইট্টা শুঁটকি)—known globally as Dried Bombay Duck (and Bombil in Western India)—is one of the most celebrated and consumed dried fish varieties in Bangladeshi and West Bengal cuisine. Sourced from the fresh catches of the Bay of Bengal, the fresh Loitta fish has a very soft, gelatinous texture that makes it highly perishable.
