Ayer Fish (scientifically classified as Sperata aor), also known locally as Ayre, Aor, or Long-Whiskered Catfish, is a highly prized freshwater river fish native to South Asia, especially Bangladesh and India. Belonging to the catfish family, this giant river fish is completely scaleless and celebrated for its firm, dense, meaty texture, low bone count, and oily, full-bodied culinary profile.
Because it lacks fine bones, it is a dominant centerpiece in Bengali household catering and is traditionally cut into thick steaks or cross-sectional fillets to hold up against simmering stews
